A Level Food Technology is a balance of food science and nutrition alongside developing creative skills in design and product manufacture. You will learn about the complex relationship between materials, manufacture and marketing of food products. You will also be given the opportunity to develop and solve food design problems. Food technologists taking this course develop a strong understanding of commercial and industrial practices in the food industry.
Unit 1 Materials, Components and Application
You will research the following topics and design nutritional meals that meet the needs of individuals.
Macro and Micro nutrients
Social factors affecting food consumption e.g. culture, economics, work, family patterns
Dietary needs of individuals and diet planning
How mass media has an impact on the food we consume
Health and safety
Environmental factors that influence food choices
Food labelling and nutritional information
You will carry out a product development in an area of food that interests you. This will consist of 50 hours of work (25 of which are practical).
You will be assessed on:
Development of design proposal
Making and modelling products
Testing and Evaluation
Communication and presentation
Unit 3 (Year 13)
Design and Manufacture
You will study the following topics:
The physical and chemical structures of micronutrients
Quality assurance and control
The effect of micro organisms and enzymes
Nutritional composition of food
Physical and sensory characteristics of food
Unit 4 Controlled assessment
You will carry out a product development in an area of food that interests you. Your final product must be commercially viable on an industrial scale.
Five GCSE A* – C including maths and English
AS Unit 1 (25%) materials, components and application
2 hour written exam (80 marks)

Coursework portfolio consisting of design and make products (80 marks)
AS Unit 3 (25%) Design folder and manufactured outcome

You will be required to bring your own ingredients for the making part of the course.
